Slow Cooker Mediterranean Chicken (Healthy & Sugar-Free)
This flavor-packed, tender chicken dish is loaded with Mediterranean herbs, olives, and tomatoes. It’s a perfect low-carb, sugar-free meal that’s easy to prep!
Ingredients:
2 lbs chicken thighs or breasts (bone-in or boneless)
2 tbsp olive oil
1 tsp garlic powder (or 3 cloves fresh garlic, minced)
1 tsp oregano
1 tsp basil
½ tsp thyme
½ tsp smoked paprika
½ tsp black pepper
½ tsp salt
1 (14 oz) can diced tomatoes (no sugar added)
½ cup black or green olives (pitted, sliced)
½ small red onion, sliced
¼ cup feta cheese (optional)
2 tbsp capers (optional, for extra tang)
½ lemon, juiced
Instructions:
1. Season the Chicken – Rub the chicken with olive oil, garlic, oregano, basil, thyme, paprika, salt, and pepper.
2. Layer in Slow Cooker – Place diced tomatoes, onions, olives, and capers in the slow cooker. Add chicken on top.
3. Cook – Cover and cook on:
LOW for 6-7 hours OR
HIGH for 3-4 hours until tender.
4. Finishing Touches – Before serving, stir in lemon juice and top with feta cheese if using.
