Slow Cooker Pork Chops Recipe
Ingredients:
4 bone-in or boneless pork chops
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon paprika
1 tablespoon olive oil or butter
1 cup low-sodium chicken broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme (or 1 tablespoon fresh)
1/2 cup heavy cream (or unsweetened coconut cream for dairy-free)
1 teaspoon xanthan gum or cornstarch (for thickening, optional)
Instructions:
1. Season the pork chops with salt, pepper, garlic powder, onion powder, and paprika.
2. Sear (optional): Heat oil or butter in a skillet over medium-high heat and brown the pork chops for 2–3 minutes per side.
3. Place in slow cooker and pour in the chicken broth and Worcestershire sauce. Sprinkle with thyme.
4. Cook on low for 6–7 hours or high for 3–4 hours, until tender.
5. Make the sauce: Remove pork chops and whisk heavy cream and xanthan gum (or cornstarch) into the juices in the slow cooker. Let it thicken for 5 minutes.
6. Serve pork chops with the creamy sauce over them.
Great sides for this: mashed cauliflower, roasted veggies, or a simple salad. You can also swap the heavy cream for a sugar-free gravy option. Let me know if you’d like more variations!
