Smothered Pork Chop Scalloped Potato Casserole


Ingredients:


4 bone-in or boneless pork chops


4 cups thinly sliced potatoes (Yukon Gold or Russet)


1 small onion, thinly sliced


2 tbsp butter


2 tbsp olive oil


2 cloves garlic, minced


1 cup heavy cream


1 cup chicken broth


1 ½ cups shredded cheddar cheese


½ cup Parmesan cheese


1 tsp salt


½ tsp black pepper


1 tsp smoked paprika


½ tsp dried thyme


½ tsp onion powder



Instructions:


1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.



2. Season the pork chops with salt, pepper, smoked paprika, and onion powder.



3. Sear the pork chops: Heat olive oil in a skillet over medium-high heat and brown the pork chops for 2-3 minutes per side. Set aside.



4. Make the sauce: In the same skillet, melt butter, sauté onions and garlic until soft, then add heavy cream and chicken broth. Simmer for 2 minutes, then stir in 1 cup cheddar cheese until melted.



5. Assemble the casserole: Layer half the potatoes in the dish, pour half the sauce over them, then repeat with the remaining potatoes and sauce.



6. Place the pork chops on top and sprinkle with Parmesan cheese.



7. Bake uncovered for 45-50 minutes, or until potatoes are tender and pork reaches 145°F (63°C). If needed, broil for 2-3 minutes to brown the top.



8. Rest for 5-10 minutes before serving.
