Ingredients
1 (8 oz) block cream cheese, softened
¼ cup heavy cream
¼ cup powdered sweetener (monk fruit, erythritol, or your choice)
1 tsp vanilla extract
1 (21 oz) can sugar-free strawberry pie filling (or homemade)
1 box sugar-free vanilla or yellow cake mix (or almond flour mix for keto)
½ cup unsalted butter, melted
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
2. In a bowl, beat cream cheese, heavy cream, sweetener, and vanilla until smooth.
3. Spread the strawberry pie filling evenly in the baking dish.
4. Drop spoonfuls of the cream cheese mixture over the strawberries and gently swirl.
5. Sprinkle the dry cake mix evenly over the top.
6. Drizzle melted butter over the cake mix (do not stir).
7. Bake for 40–45 minutes, or until golden brown and bubbly.
8. Let it cool slightly before serving.
