Sugar-Free Chocolate Peanut Butter Bites
Ingredients
For the filling:
½ cup natural peanut butter (or almond butter)
2 tbsp coconut flour (for thickness)
2 tbsp powdered erythritol or monk fruit sweetener
½ tsp vanilla extract
A pinch of salt (if using unsalted peanut butter)
For the chocolate coating:
1 cup sugar-free chocolate chips (like Lily’s) or 85% dark chocolate
1 tbsp coconut oil (for smoother melting)
Topping (optional):
Crushed sugar-free peanut brittle or chopped roasted peanuts
Instructions
1. Make the filling:
In a bowl, mix peanut butter, coconut flour, sweetener, vanilla extract, and salt.
Stir until a thick, dough-like consistency forms.
Roll into small bite-sized balls or flatten into small squares, then place on a parchment-lined tray.
Freeze for 20–30 minutes until firm.
2. Melt the chocolate:
In a microwave-safe bowl, melt the sugar-free chocolate chips with coconut oil in 20-second intervals, stirring in between until smooth.
3. Coat the bites:
Dip each peanut butter bite into the melted chocolate using a fork, ensuring full coverage.
Place back on the parchment-lined tray and sprinkle crushed peanuts or sugar-free brittle on top.
4. Chill and serve:
Refrigerate for about 10–15 minutes until the chocolate hardens.
Store in an airtight container in the fridge or freezer for longer shelf life.
