Sugar-Free No-Bake Peanut Butter Balls
Ingredients:
1 cup natural peanut butter (unsweetened)
½ cup almond flour (or coconut flour for a firmer texture)
¼ cup sugar-free sweetener (like monk fruit, erythritol, or allulose)
1 tsp vanilla extract
¼ tsp salt (if peanut butter is unsalted)
½ cup sugar-free chocolate chips (optional, for dipping)
1 tbsp coconut oil (if melting chocolate)
Instructions:
1. Mix the Dough: In a bowl, combine peanut butter, almond flour, sweetener, vanilla extract, and salt. Stir until a thick dough forms. If it’s too sticky, add more almond flour.
2. Shape into Balls: Roll the mixture into 1-inch balls and place them on a parchment-lined plate.
3. Chill: Refrigerate for at least 30 minutes to firm up.
4. Optional Chocolate Coating: Melt sugar-free chocolate chips with coconut oil in a microwave (30-second intervals, stirring in between). Dip or drizzle chocolate over the peanut butter balls.
5. Set & Enjoy: Refrigerate again until chocolate hardens, then enjoy!
These store well in the fridge for up to a week or in the freezer for longer. Want a crunchy version? Try adding chopped nuts or unsweetened coconut flakes!
