Suger Free Old South Cola Pork Loin
Ingredients:
1 (3-4 lb) pork loin
1 can (12 oz) sugar-free cola (like Zevia or Diet Coke)
1/2 cup sugar-free ketchup
1/4 cup apple cider vinegar
2 tbsp Worcestershire sauce
2 tbsp Dijon mustard
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
Salt & pepper to taste
Instructions:
1. Preheat oven to 325°F (163°C).
2. Season the pork loin with salt, pepper, garlic powder, onion powder, and paprika.
3. In a bowl, mix sugar-free cola, ketchup, vinegar, Worcestershire sauce, and mustard to make the glaze.
4. Place pork loin in a roasting pan and pour half of the glaze over it.
5. Cover with foil and bake for 1.5 to 2 hours, basting with the remaining glaze every 30 minutes.
6. Uncover for the last 20 minutes to let it caramelize.
7. Rest for 10 minutes, then slice and serve!
