Very Wet Chocolate Cake


(AKA "Chocolate Lava Cake Meets Fudge Cake")


Ingredients


1 cup unsweetened cocoa powder


2 cups boiling water


2 ½ cups almond flour (or regular flour if not keto)


2 tsp baking soda


1 tsp baking powder


½ tsp salt


1 cup unsalted butter, melted


1 ½ cups sugar substitute (or regular sugar)


4 large eggs


2 tsp vanilla extract


1 cup sour cream


½ cup heavy cream (for extra moisture)


4 oz melted dark chocolate (for richness)



Instructions


1. Preheat oven to 350°F (175°C). Grease a 9x13-inch pan or two 9-inch round pans.



2. Mix cocoa and boiling water in a bowl until smooth. Let it cool.



3. Combine dry ingredients (almond flour, baking soda, baking powder, and salt) in another bowl.



4. Cream butter and sweetener in a large bowl until fluffy. Add eggs one at a time, then stir in vanilla.



5. Mix in sour cream and heavy cream for an ultra-moist texture.



6. Add melted chocolate and the cooled cocoa mixture.



7. Slowly mix dry ingredients into the wet batter until smooth.



8. Bake for 30–35 minutes until the center is just barely set. It should jiggle slightly for that wet texture.



9. Let it cool slightly, but serve warm for a melty, fudgy experience.
