WW Lentil Soup (Flavorful & Healthy!)

Ingredients:
1 cup dry lentils, rinsed
1 small onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 (14.5 oz) can diced tomatoes (no sugar added)
6 cups vegetable broth (or low-sodium chicken broth)
1 tsp olive oil
1 tsp ground cumin
½ tsp smoked paprika
½ tsp dried thyme
½ tsp turmeric (optional, for extra flavor & health benefits)
½ tsp salt (adjust to taste)
¼ tsp black pepper
1 bay leaf
1-2 cups fresh spinach or kale (optional)
1 tbsp lemon juice (for brightness)
Instructions:
1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 minutes until softened. Add garlic, cumin, paprika, thyme, turmeric, salt, and pepper. Stir for 1 minute.
2. Simmer the Soup: Add lentils, diced tomatoes, broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-35 minutes until lentils are tender.
3. Final Touches: Remove bay leaf. Stir in spinach or kale (if using) and cook for 2 more minutes until wilted. Add lemon juice and adjust seasoning if needed.
4. Serve & Enjoy! Delicious on its own or with a side of whole-grain bread.
