Ingredients:
2 medium zucchinis (grated)
½ cup rolled oats (or quick oats)
¼ cup chickpea flour (or breadcrumbs)
1 small onion (finely chopped)
2 cloves garlic (minced)
1 teaspoon cumin powder
½ teaspoon chili flakes (optional)
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley or cilantro
1 tablespoon olive oil (for cooking)
Instructions:
1. Prepare the Zucchini:
Grate the zucchini and squeeze out excess water using a clean kitchen towel.
2. Mix the Ingredients:
In a bowl, combine grated zucchini, oats, chickpea flour, onion, garlic, cumin, chili flakes, salt, pepper, lemon juice, and parsley.
Mix well and let it rest for 10 minutes so the oats absorb moisture.
3. Shape the Cutlets:
Take small portions and shape them into patties or cutlets.
4. Cook the Cutlets:
Heat oil in a pan over medium heat.
Cook each cutlet for about 3–4 minutes per side until golden brown and crispy.
5. Serve & Enjoy!
Serve hot with yogurt dip, chutney, or a side salad.
