No-Bake Chocolate Pudding Cake

 








Ingredients


Base:


1 ½ cups sugar-free ladyfingers or almond flour biscuits πŸͺ


¼ cup unsweetened almond milk πŸ₯›



Chocolate Layer:


2 cups heavy cream πŸ₯„


1 cup unsweetened almond milk πŸ₯›


½ cup sugar-free chocolate chips 🍫


¼ cup cocoa powder 🍫


2 tbsp powdered sweetener (monk fruit or erythritol) 🍯


2 tsp gelatin powder (or agar-agar) πŸ₯„


1 tsp vanilla extract 🌿



Topping:


Sugar-free chocolate shavings 🍫✨



Instructions


1️⃣ Arrange the ladyfingers or biscuits in a pan. Drizzle with almond milk to soften. πŸͺπŸ₯›

2️⃣ In a saucepan, heat heavy cream, almond milk, cocoa powder, and sweetener. Stir until smooth. 🍫πŸ”₯

3️⃣ Melt in the chocolate chips and add vanilla extract. Mix well. 🌿🍫

4️⃣ Sprinkle gelatin over 2 tbsp of water, let it bloom for 5 minutes, then stir into the hot mixture. πŸ₯„

5️⃣ Pour the chocolate mixture over the biscuit base and refrigerate for at least 4 hours. ❄️⏳
