Ingredients:
For the Crust:
1 cup crushed sugar-free biscuits (or graham crackers)
¼ cup melted butter
For the Filling:
8 oz cream cheese, softened
1 cup heavy whipping cream
½ cup sugar-free sweetener (or adjust to taste)
1 tbsp lemon juice
2 cups chopped fresh or canned pineapple (drained if using canned)
Instructions:
1️⃣ Prepare the Crust:
Mix the crushed biscuits with melted butter.
Press the mixture into the bottom of a pan.
Refrigerate for about 15-20 minutes while preparing the filling.
2️⃣ Make the Filling:
In a bowl, whip the heavy cream until soft peaks form. Set aside.
In another bowl, beat the cream cheese, sweetener, and lemon juice until smooth.
Gently fold in the whipped cream.
3️⃣ Assemble the Dessert:
Add half of the chopped pineapple into the creamy mixture.
Spread the mixture evenly over the crust.
Top with the remaining pineapple pieces.
4️⃣ Chill & Serve:
Refrigerate for at least 3-4 hours (or overnight for best results).
Garnish with fresh mint (optional) and serve chilled!
