Pineapple Pecan Cake

 








Ingredients


For the Cake:


2 cups all-purpose flour 🌾


1 ½ cups sugar (or sugar-free alternative) 🍚🚫


1 tsp baking soda 🥄


½ tsp salt 🧂


2 eggs 🥚🥚


1 (20 oz) can crushed pineapple with juice 🍍🥫


1 cup chopped pecans 🌰



For the Frosting:


8 oz cream cheese, softened 🧀


½ cup unsalted butter, softened 🧈


2 cups powdered sugar (or sugar-free alternative) ❄️🚫


1 tsp vanilla extract 🌿


½ cup chopped pecans for topping 🌰



Instructions


1️⃣ Preheat oven to 350°F (175°C). Grease a 9x13-inch pan 🏺.

2️⃣ In a bowl, mix flour, sugar, baking soda, and salt. Add eggs, crushed pineapple with juice, and pecans. Stir until combined 🥄.

3️⃣ Pour batter into the pan and bake for 30-35 minutes or until a toothpick comes out clean ⏳.

4️⃣ While cake cools, beat cream cheese, butter, powdered sugar, and vanilla until smooth 🎂.

5️⃣ Spread frosting over the cooled cake and sprinkle with pecans. Slice & enjoy! 🍰✨
