Ingredients
🛒 2 lbs oxtail, cut into pieces
🧂 Salt & pepper to taste
🌿 1 tsp thyme (dried or fresh)
🧄 4 cloves garlic, minced
🧅 1 onion, chopped
🌶️ 1 small red chili (optional)
🥕 2 carrots, diced
🍅 1 can diced tomatoes
🥄 2 tbsp tomato paste
🥫 2 cups beef broth
🍷 1/2 cup red wine (optional)
🛢️ 2 tbsp oil for searing
Instructions
1️⃣ Season & Sear: Season the oxtail with salt, pepper, and thyme. Heat oil in a large pot and sear the oxtail until browned on all sides. Remove and set aside.
2️⃣ Sauté Veggies: In the same pot, sauté onion, garlic, and chili until fragrant. Add carrots and cook for a few minutes.
3️⃣ Deglaze & Simmer: Pour in the wine (if using) and scrape the bottom of the pot. Add tomato paste, diced tomatoes, and broth. Stir well.
4️⃣ Slow Cook: Return the oxtail to the pot, cover, and simmer for 3–4 hours until the meat is fall-off-the-bone tender.
5️⃣ Final Touch: Adjust seasoning, garnish with fresh herbs, and serve with rice or mashed potatoes. 🍚🥔
