Ingredients
Crust:
π§ 1 ½ cups almond flour
π₯₯ ¼ cup coconut flour
π― ¼ cup sugar-free sweetener
π§ 6 tbsp melted butter
Filling:
π 8 oz cream cheese, softened
π ½ cup sugar-free sweetener
π₯ 2 eggs
π ¼ cup fresh lemon juice
π§ 1 tsp vanilla extract
Topping (Optional):
π₯ ½ cup Greek yogurt (or sour cream)
π― 2 tbsp sugar-free sweetener
Instructions
1️⃣ Preheat oven to 350°F (175°C). Grease an 8x8-inch baking dish.
2️⃣ In a bowl, mix almond flour, coconut flour, sweetener, and melted butter. Press into the baking dish and bake for 8-10 minutes.
3️⃣ In another bowl, beat cream cheese, sweetener, eggs, lemon juice, and vanilla until smooth. Pour over the crust.
4️⃣ Bake for 20-25 minutes or until set. Let cool.
5️⃣ If using the topping, mix Greek yogurt with sweetener and spread over the bars.
6️⃣ Chill for at least 2 hours, then slice and enjoy! ❄️
