Sugar-Free Lemon Cheesecake Bars

 









Ingredients


Crust:

🧈 1 ½ cups almond flour

πŸ₯₯ ¼ cup coconut flour

🍯 ¼ cup sugar-free sweetener

🧈 6 tbsp melted butter


Filling:

πŸ‹ 8 oz cream cheese, softened

πŸ‹ ½ cup sugar-free sweetener

πŸ₯š 2 eggs

πŸ‹ ¼ cup fresh lemon juice

πŸ§‚ 1 tsp vanilla extract


Topping (Optional):

πŸ₯› ½ cup Greek yogurt (or sour cream)

🍯 2 tbsp sugar-free sweetener


Instructions


1️⃣ Preheat oven to 350°F (175°C). Grease an 8x8-inch baking dish.

2️⃣ In a bowl, mix almond flour, coconut flour, sweetener, and melted butter. Press into the baking dish and bake for 8-10 minutes.

3️⃣ In another bowl, beat cream cheese, sweetener, eggs, lemon juice, and vanilla until smooth. Pour over the crust.

4️⃣ Bake for 20-25 minutes or until set. Let cool.

5️⃣ If using the topping, mix Greek yogurt with sweetener and spread over the bars.

6️⃣ Chill for at least 2 hours, then slice and enjoy! ❄️
