Ingredients:
☕ 1 cup strong brewed coffee (cooled)
🍪 8-10 low-carb ladyfinger biscuits (or almond flour sponge cake)
🥚 3 egg yolks
🍯 2 tbsp sugar-free sweetener (erythritol or monk fruit)
🥄 1 tsp vanilla extract
🥛 1 cup mascarpone cheese
🥛 1/2 cup heavy whipping cream
🍫 Unsweetened cocoa powder for dusting
Instructions:
1️⃣ Brew strong coffee and let it cool. Optionally, add a splash of rum or vanilla extract. ☕
2️⃣ In a bowl, whisk egg yolks and sweetener over a double boiler until thick and pale. Remove from heat. 🥄
3️⃣ Stir in mascarpone cheese until smooth.
4️⃣ In another bowl, whip heavy cream until stiff peaks form, then fold into the mascarpone mixture. 🥛
5️⃣ Dip ladyfingers briefly in coffee and place them at the bottom of serving glasses.
6️⃣ Layer with mascarpone cream, then repeat layers.
7️⃣ Finish with a dusting of cocoa powder. 🍫
8️⃣ Chill for at least 4 hours (or overnight) for the best flavor. ❄️
