Cheesy Mashed Potato Casserole

 










Ingredients


6 large potatoes ๐Ÿฅ”


1/2 cup butter ๐Ÿงˆ


1 cup sour cream ๐Ÿถ


1 cup shredded cheddar cheese ๐Ÿง€


1/2 cup milk ๐Ÿฅ›


Salt & pepper to taste ๐Ÿง‚


2 eggs (optional for fluffiness) ๐Ÿฅš


Chopped chives or green onions (for topping) ๐ŸŒฟ



Instructions


1. Peel & boil potatoes ๐Ÿฅ”➡️๐Ÿ”ฅ until fork-tender (about 15–20 minutes).



2. Drain and mash them with butter, sour cream, milk, salt, and pepper. Mash until smooth and creamy.



3. Add cheese and mix until melty and combined ๐Ÿง€❤️.



4. Optional: Beat in eggs for a fluffier, souffle-like texture ๐Ÿฅš✨.



5. Transfer mixture to a greased baking dish ๐Ÿงด + ๐Ÿฅ˜.



6. Top with extra cheese if desired ๐Ÿง€.



7. Bake at 375°F (190°C) for 25–30 minutes or until golden on top ๐Ÿ”ฅ.



8. Garnish with chives or green onions ๐ŸŒฟ and serve hot!
