Gluten-free & super fluffy!
Ingredients:
1 cup milk đ„
1/2 cup oil (like vegetable or olive) đą️
1 tsp salt đ§
2 cups tapioca flour đż
1 to 1 1/2 cups grated cheese (Parmesan or mozzarella) đ§
2 eggs đ„đ„
Instructions:
1. Preheat oven to 375°F (190°C) đ„
2. In a saucepan, heat milk, oil, and salt until it just starts to boil đ«
3. Remove from heat and stir in tapioca flour until smooth đ„
4. Let cool slightly, then mix in the eggs and cheese đ§đ„
5. Pour or scoop batter into greased muffin cups đ§
6. Bake for 15–20 minutes until puffed and golden ⏱️
7. Let cool slightly and enjoy warm! đ
