Veggie Egg Muffins

 









Ingredients:


6 large eggs


1/4 cup milk (or heavy cream for richness)


Salt & pepper to taste


1/2 cup chopped bell peppers


1/4 cup chopped onions


1/4 cup chopped spinach


1/4 cup shredded cheese (cheddar or your choice)


Optional: diced cooked bacon, sausage, or mushrooms



Instructions:


1. Preheat oven to 375°F (190°C). Grease a muffin tin.



2. Whisk together eggs, milk, salt, and pepper.



3. Fill muffin cups with chopped veggies and any extras (like cheese or meats).



4. Pour the egg mixture into each muffin cup, filling about 3/4 full.



5. Bake for 18–22 minutes or until the tops are puffy and set.



6. Let cool slightly, then remove and enjoy.
