cheesy beef and potato casserole

Ingredients


1 lb ground beef 🍖


4 medium potatoes, thinly sliced 🥔


1 small onion, diced 🧅


1 cup frozen corn 🌽


1 ½ cups shredded cheddar cheese 🧀


1 cup beef broth 🥣


½ cup heavy cream 🥛


1 tsp garlic powder 🧄


1 tsp paprika 🌶️


Salt & pepper to taste 🧂


Fresh parsley for garnish 🌿



Instructions


1️⃣ Preheat the oven to 375°F (190°C). 🔥

2️⃣ Cook ground beef with diced onion in a pan until browned. Drain excess grease. 🍳

3️⃣ Season with garlic powder, paprika, salt, and pepper. Add frozen corn and mix. 🌽

4️⃣ Layer half of the sliced potatoes in a greased baking dish. 🥔

5️⃣ Spread the cooked beef mixture evenly over the potatoes. 🍖

6️⃣ Pour beef broth and heavy cream over the layers for moisture. 🥛

7️⃣ Top with the remaining potatoes and sprinkle shredded cheddar cheese over everything. 🧀

8️⃣ Cover with foil and bake for 45 minutes. ⏳

2 lbs king crab legs 🦀


4 tbsp butter, melted 🧈


3 cloves garlic, minced 🧄


1 tbsp lemon juice 🍋


1 tsp paprika 🌶️


1 tbsp fresh parsley, chopped 🌿


Salt & pepper to taste 🧂



Instructions


1️⃣ Preheat the grill to medium-high heat (or preheat oven to 375°F/190°C). 🔥

2️⃣ Prepare the garlic butter by mixing melted butter, garlic, lemon juice, paprika, parsley, salt, and pepper. 🍋🧄🧈

3️⃣ Cut the crab shells open with kitchen scissors to expose the meat. ✂️

4️⃣ Brush the garlic butter mixture generously over the crab meat. 🖌️

5️⃣ Grill for about 5-7 minutes, until the crab is heated through and slightly charred. (If baking, place in a baking dish and cook for 12-15 minutes). ⏳🔥

Sweet and Sour Sauce


A quick and easy sauce that’s the perfect mix of sweet and tangy!


Ingredients:

1 cup pineapple juice

2 tbsp rice vinegar

3 tbsp ketchup

1/4 cup white sugar

1 tbsp soy sauce

3 tbsp water

1 tbsp cornstarch

1/4 tsp black pepper


Instructions:

In a saucepan, mix pineapple juice, rice vinegar, ketchup, sugar, and soy sauce. Heat over medium.

In a small bowl, mix water and cornstarch, then add to the saucepan, stirring constantly.

Cook for a few minutes until the sauce thickens. Add black pepper, and it’s ready!


Serve with stir-fries, grilled meats, or veggies. Enjoy!

Classic Pineapple Quick Bread

2 cups all-purpose flour 🍚


1 cup sugar 🧂


1 tsp baking soda ⬆️


½ tsp salt 🧂

½ cup butter, melted 🧈


1 cup crushed pineapple (with juice) 🍍

Instructions:

1️⃣ Preheat oven to 350°F (175°C). Grease a loaf pan. 🏺

2️⃣ In a bowl, mix flour, sugar, baking soda, and salt. 🥣

Instructions


1️⃣ Preheat oven to 400°F (200°C) 🔥. Line a baking sheet with parchment paper. 📜

2️⃣ Heat water and butter in a saucepan until boiling. Remove from heat and stir in flour until it forms a ball. 🔄

3️⃣ Add eggs one at a time, beating well after each, until smooth and glossy. 💛

4️⃣ Scoop or pipe small mounds onto the baking sheet. 🏔️

5 MINUTE 4 INGREDIENT NO BAKE CHEESECAKE

Ingredients

  • 1 can of sweetened condensed milk
  • 1 8 ounce (250g) tub of cool whip (whipping cream)
  • 1/3 cup of lemon or lime juice
  • 1 8 ounce (250g) package of cream cheese.

Steps:
Most important part of this recipe, is to leave the cream cheese out for a couple hours at room temperature. The cream cheese will become soft and smooth. The importance of this is to create a smooth texture. Not doing so, will create horrible lumps of cream cheese that will ruin the flavor of this pie.

After your cream cheese is softened enough, I like to see if it will spread easily with a plastic spatula. In a mixing bowl, mix all before mentioned ingredients. Please note: the lemon/lime juice must come last. The reaction of the citrus juice will start to harden your mixture almost immediately.

On the low speed of you hand mixer, blend well. Around 2 minutes of so is plenty, just make sure all ingredients are incorporated. Immediately pour mixture into a waiting graham crust or for those of us that can’t have the gluten, I opt for muffin cups. Refrigerate for an hour to and hour and a half and viola
